Biography:

Dong Yang currently works at the College of Food Science and Nutritional Engineering, China Agricultural University. Dong does research in Food Biochemistry, Molecular Biology, Structural Biology, and Computational Biology. Dong's research focuses on the interaction between molecular chaperons and gluten proteins, carbohydrate utilizing enzymes and polysaccharides structures that further leads to the gluten network formation, prebiotic and probiotic relationships.
